Doesn’t really feel like Fall here in NJ during the daytime but evenings and nights are getting cooler and dropping into the 50s.
Since I live in “the Garden State”, now is a great time for all our vegetables and peppers (even our tomatoes are doing fairly well still). I was given some butternut squash the other day by my Mom from her garden and wanted to make a good Fall dish with it. I made this recipe below and it really did turn out well. Give it a try!
I paired it with some salmon marinated in maple syrup, soy sauce, garlic, salt, and pepper. Also, took the time to roast the pumpkin seeds myself with a little butter and a touch of nutmeg.
